We loved this peanut brittle. I cooked it on med low & it felt like forever before it hit 280/300 lol. I used the light syrup & when I poured it in the cookie sheet, I thought it was too light. I think that it would be easier to get out of the pan if you line it with foil and then oil that though. I do that with English Toffee and haven't had any issues. And that way you can just lift it out to break it up. Just a suggestion.
